Sliced Baked Potatoes

4 Medium Even Potatoes
1 tsp. Salt
2-3 Tbsp. Melted Butter

2-3 Tbsp. Chopped Fresh Herbs (e.g. Parsley, Chives, Thyme, Sage, etc.)
4 Tbsp. Grated Cheddar Cheese
1 Tbsp. Parmesan Cheese

 
       
 
  1. Peel potatoes if skin is tough, otherwise just scrub and rinse.  Cut potatoes in thin slices but not all the way through.  (Use handle of spoon to prevent knife from cutting all the way.)
  2. Put potatoes in baking dish and fan them slightly.  Sprinkle with salt and drizzle with butter.  Sprinkle with herbs.
  3. Bake at 425F for about 50 min.
  4. Remove from oven and sprinkle with cheeses.
  5. Bake for another 10-15 min. until lightly browned, cheeses are melted and potatoes are soft inside (check with a fork).
