Meatloaf

Preheat oven to 350°.  Combine and shape into a loaf:

            1 lb. ground beef (I use half ground turkey)
            1 egg yolk, optional
            2 Tbl. chopped parsley
            1 Tbl. soft butter
            1 Tbl. bread crumbs
            1 tsp. salt
            1 tsp. lemon juice
            ¼ tsp. pepper
            ½ tsp. onion juice

Place the loaf in a lightly-greased pan.  Bake it for one hour.  Pour some over the top and baste at intervals with the remainder of:

            ¼ C. butter
            1 C. vegetable stock or 1 C. boiling water plus ½ package dried soup mix.

Additional note:  I always double this recipe and make two loaves, then surround them with cut, unpeeled potatoes.  Very yummy in winter!
